With gram flour, aromatic spices, and a tangy lime twist, this Indian-style fry is both crunchy and wholesome.

Ingredients:
Bitter gourd (karela), gram flour (besan), turmeric, red chilli powder, coriander powder, lime, coriander leaves, salt, onion, garlic, green chilli, red chilli, oil, chana dal, mustard seeds, cumin seeds (zeera), urad dal, and curry leaves.

Method:
1. Slice bitter gourd into rings, add salt and lemon juice, and let it rest for 1 hour.
→ Squeeze out the water but do not rinse (it removes bitterness).
2. In a bowl, mix gram flour, turmeric, red chilli powder, coriander powder, and salt.
3. In a pan, heat a spoon of oil and fry the bitter gourd rings until crisp. Set aside.
4. Heat oil again; add chana dal, mustard seeds, cumin seeds, urad dal, curry leaves, red chilli, garlic, and green chilli. Sauté until fragrant.
5. Add onions and a pinch of turmeric; toss well.
6. Add the fried bitter gourd and mix in the gram flour spice mix.
7. Cook for 5–10 minutes, stirring occasionally.
8. Garnish with coriander leaves and squeeze lime as per taste.
