How to Season a Cast Iron Skillet

I'm back in Brooklyn from spending the holiday in Ohio. I got an unintended Christmas gift when my mom offered me one of her old cast iron skillets that she doesn't use much anymore. I happily took it off her hands!
The first thing to do when you get a cast iron skillet (either brand new or a hand-me-down) is to season it. Seasoning it gives the skillet non-stick properties. A well-seasoned cast iron skillet is likely to become your best friend in the kitchen!!
So, in this video, I show you how to season. Scientifically, what happens when you season multiple times is that a thin layer of polymerized oil coats the skillet.
As Kenji Lopez-Alt over at the food blog Serious Eats explains it: "In a properly seasoned cast iron pan, one that has been rubbed with oil and heated repeatedly, the oil has already broken down into a plastic-like substance that has bonded to the surface of the metal."
All you do is:
-Heat your oven to 325 degrees.
-Wash the skillet well with a sponge or brush in warm, soapy water.
-Fully dry it.
-With either a cloth or paper towel, rub the entire skillet in oil (vegetable oil, melted shortening, or really any other oil you have on hand).
-Place the skillet on the center rack in the oven, face down. To catch any dripping, put a sheet of aluminum foil underneath.
-Bake for an hour.
-Let it cool completely.
You can repeat this if you have the time and inclination!
