1/2 cup water (120ml)
1/2 tablespoon sugar
1/2 tablespoon soy sauce
1/2 tablespoon mirin
・Sake steamed shrimp
2 shrimp ※small amount of salt, sake

1 tablespoon sake
・Anago (congar eel)
1 Anago (grilled congar eel)
1 tablespoon sake
・1 English cucumber
・2 sheets nori
・Tamagoyaki
3 large eggs
2 teaspoon mentsuyu/2 tablespoon water
1 teaspoon sugar/ 1/2 teaspoon potato starch

・Sushi rice
400g (14 oz) freshly cooked rice
3 tablespoons sushi vinegar
・Homemade sushi vinegar
3 tablespoons sugar
1 cup (240 ml) rice vinegar
1 teaspoon salt
1 piece kombu (0.1 oz / 3–5g, 2×4 inches or 5×10 cm)
