Here’s a simple Bengali-style Egg Curry recipe 🍳🌶️

🥚 Egg Curry Recipe (Serves 3–4)

Ingredients

4–6 eggs (boiled & shelled)

3 tbsp oil

1 large onion (finely chopped)

2 tomatoes (pureed or finely chopped)

1 tbsp ginger-garlic paste

1 green chili (optional, slit)

½ tsp turmeric powder

1 tsp red chili powder

1 tsp coriander powder

½ tsp garam masala

Salt to taste

1 cup water

Fresh coriander leaves (for garnish)

Optional (for richer taste)

2 tbsp curd (whisked)

½ tsp cumin seeds

Method

1. Boil & prep eggs
Boil eggs, peel them, and lightly shallow-fry with a pinch of turmeric and salt. Keep aside.

2. Make the base
Heat oil in a pan. Add cumin seeds (if using).
Add chopped onions and fry until golden brown.

3. Add aromatics
Add ginger-garlic paste and green chili. Sauté till raw smell disappears.

4. Tomatoes & spices
Add tomato puree, turmeric, chili powder, coriander powder, and salt.
Cook until oil separates from the masala.

5. Gravy
Add water and bring to a boil. Add curd (optional) and mix well.

6. Add eggs
Add fried eggs, cover, and simmer for 5–7 minutes.

7. Finish
Sprinkle garam masala and garnish with coriander leaves.

Serve with

Steamed rice 🍚
