A proper New York–style Pecking House fried chicken sandwich is all about ultra-juicy chicken and a shatteringly crisp crust. The thigh is soaked in seasoned buttermilk, dredged in a starch-boosted flour mix for extra crunch, then double-fried for that famous crispy coating. Finished with chilli oil, Kewpie mayo, and bread-and-butter pickles in a toasted brioche bun. Eric Huang makes to order every day – If you are in New York, this is a must try! After recreating the recipe, it's one of my favourite fried chicken sandwiches.

Ingredients (Makes 4 Sandwiches)
Chicken
• Boneless skinless chicken thighs – 700 g / 1 lb 8 oz
Marinade
• Buttermilk – 480 ml / 2 US cups / 2 UK cups
• Dijon mustard – 1 tbsp / 3 tsp / 15 g
• Garlic powder – 1 tsp / 3 g
• Onion powder – 1 tsp / 3 g
• Chinese five spice powder – ½ tsp / 1 g
Seasoning Blend (3 : 1 : 1 ratio)
• Salt – 3 tsp / 18 g
• Sugar – 1 tsp / 4 g
• MSG – 1 tsp / 4 g
• All-purpose flour – 2 tbsp / 16 g
Crispy Dredge
• All-purpose flour – 250 g / 2 US cups / 2 UK cups
• Potato starch – 80 g / ⅔ US cup / ⅔ UK cup
• Cornflour (cornstarch) – 40 g / ⅓ US cup / ⅓ UK cup
• EverCrisp or modified starch (optional) – 24 g / 3 tbsp
• Salt – 1 tsp / 6 g
• Black pepper – ½ tsp / 1 g
• Baking powder – 1 tsp / 5 g
Chilli Oil Dip
• Neutral oil – 120 ml / ½ US cup / ½ UK cup
• Dried red chillies (toasted and crushed) – 2 tbsp / 12 g
• Sichuan peppercorns (toasted) – 1 tsp / 2 g
• Sugar – 1 tsp / 4 g
• Salt – ½ tsp / 3 g
• MSG – ½ tsp / 2 g
• Vinegar powder – ½ tsp / 2 g
