Creamy garlic mushroom pasta
Ingredients
180–200 g spaghetti (or other pasta)
250 g mushrooms, sliced
500 g chicken thighs
3 tbsp garlic, minced
¾ cup unsweetened almond milk
1 tsp cornstarch mixed with 2 tbsp cold almond milk (for thickening)
Oregano
2 tbsp parmesan
Fresh parsley, chopped, for garnish
Instructions
1. Cook pasta
Boil pasta in salted water until al dente. Reserve ½ cup of pasta water, then drain.
2. Cook chicken
Season chicken with salt & pepper.
Heat a large pan over medium heat.
Cook chicken until golden brown and fully cooked (5–7 minutes). Add water/oil (if desired). Remove from pan and set aside.
3. Cook garlic & mushrooms
In the same pan, add water/oil if using
Sauté garlic until fragrant.
Add mushrooms, season, and cook until golden (6–8 minutes).
4. Make creamy sauce
Lower the heat. Stir in almond milk and the cornstarch mixture.
Simmer 2–3 minutes until slightly thickened.
Add herbs and parmesan.
5. Combine everything
Add pasta and toss well in the creamy sauce.
Add a splash of reserved pasta water if needed.
Return the chicken to the pan.
6. Finish & serve
Taste and adjust seasoning.
Garnish with parsley and extra parmesan
