This flavourful one-pot meal uses red rice and brown rice mixed with tur dal, fresh vegetables (carrot, brinjal, potato, tomato), and classic South Indian spices. Grains & Dal
Red rice — ½ cup
Brown rice — ¼ cup
Tur dal (split pigeon peas) — ½ cup
Vegetables
Carrot (chopped) — ¼ cup
Brinjal / Eggplant (chopped) — ¼ cup
Potato (small, chopped) — ¼ cup
Tomato (ripe, chopped) — ½ cup
Spices & Seasoning
Sambar powder — 1½ to 2 tbsp (adjust to taste)
Turmeric powder — ½ tsp
Red chilli powder — ½ tsp (optional/spicy level)
Salt — to taste
Tamarind pulp — 1 to 1½ tbsp (soaked, strained)
Tempering (Tadka)
Oil (or ghee) — 1 tbsp
Mustard seeds — ½ tsp
Cumin seeds — ½ tsp
Curry leaves — 8–10 leaves
Hing (asafoetida) — a pinch
Coriander leaves — 2 tbsp chopped (for garnish)
🍽️ Method (Quick & Simple)
Rinse & Soak
Wash red rice, brown rice, and tur dal separately until water runs clear.
Soak for 15–20 minutes (optional but helps cook faster).
Pressure Cook
Add rice + dal + chopped veggies + turmeric + salt + chilli powder + tamarind pulp.
Add water — about 2½ to 3 cups (adjust for consistency you like).
Pressure cook for 3–4 whistles until everything is soft.
Mash & Mix
Once pressure lowers, open and gently mash some of the cooked veggies/ dal to thicken the sambar rice.
Add sambar powder and stir well. Simmer 2–3 minutes.
Temper
Heat oil in a small pan.
Add mustard seeds → let them pop.
Add cumin seeds, curry leaves, and a pinch of hing.
Pour this hot tempering over the cooked sambar rice and mix.
Serve
Garnish with fresh coriander.
Serve hot with papad, chips, or plain curd.
