When on the highway, you want to stop for a meal at a place where you will not only get your food piping hot, consistently tasty and sumptuous enough to keep you fortified for the journey, but also in an environment that is clean and hygienic. Swathi Delicacy, located 100 kilometres from Bengaluru on the Mangalore Highway seems to have built a massive following doing precisely that. In a short span of 8 years, this eatery has come to be the preferred dining spot on the route. On a recent trip to Mangalore, I stopped for breakfast here and also caught up with co-owner, Ram Prasad Bhat to find out that his family has a legacy of being in the food service space for nearly half a century. Idli Vada
Idlis served steaming hot, the sort of welcome that would please a traveller. The texture of the idli is grainy, and comes alive when drowned in the deliciously flavourful sambar. The vada is crisp and crunchy, soft and airy inside. The chutney is green-chilli-hot and balances against the slightly sweet notes of the sambar.

Kesari Baath
Not decadently burdened with ghee, the kesari baath served here is relatively austere. On the palate, one can taste the comforting, toasty notes of the semolina, mingled with pineapple flecks, fried cashew and raisins.

Butter Masala Dose
The masala dose is crisp and kadak, smeared with a spicy red chutney inside and served, topped with a generous dollop of butter. The dose is thick and filling, the sort that would keep one sated for a few hours. The coriander freshness of the potato palya takes centerstage in this masala dose.

Open Butter Masala Dose
A fluffy open dose, thick and ‘spongy’ in its texture, with a generous sprinkling of a sweet and spicy, powdery-crunchy podi that assumes a caramelised note when the dosa is flipped over on the tava. Contrasts playfully with the creamy potato topping. The butter seems like an over the top indulgence.
