Filipino Food
Silken Tofu with Sabo/Boba pearls and arnibal
Hindsight comments from video: I made the pearls too big and i should've steamed the tofu all in one container instead of separate smaller ones.
-Silken Tofu
1 Cup Soybeans
1/2 tsp Gypsum
Soak dried soybeans overnight, drain and rinse
Puree beans with 1 cup water until smooth
Heat on medium until it starts to simmer, take off heat
Pour in cheese cloth and milk all liquid (careful hot)
Simmer remaining soymilk for 10 min
Chill
dissolve 1/2 tsp gypsum in 2 Tbsp water, gently mix into soymilk
Pour into container and steam until firm texture
-Sago/Boba Pearls
1 Cup Tapioca Flour
4 Cups Water
1 Cup Brown Sugar
Boil water and dissolve brown sugar in pot
Take 1/2 cup sugar water combine with Tapioca Flour
Knead
Cut into 1~2cm balls by either piecing it out from the wad of dough or taking a rolling pin, rolling dough into thin mini sausages and cutting a knife to portion it out
Add tapioca pearls to boiled sugar water and boil for 30 min covered
rinse tapioca peals in regular water, transfer to ice water
assemble using brown sugar syrup used from the boiling tapioca pearls
