Ingredients:
• ½ can chopped tomatoes, drained
• ½ can kidney beans, drained
• ¼ cup vegetable stock (or stock of your choice)
• 2 tsp onion powder
• 2 tsp garlic power
• Knob of butter
• 1 tsp ground cumin
• 1 tsp paprika
• Pinch of chili flakes
• Sour cream to top (optional)
• Coriander, to serve (optional)
Directions:
1. Before starting you may combine all ingredients in a large container and microwave servings as you desire.
2. Put spices and butter in microwavable container, stir and microwave on high for 30 seconds. Leave to stand for 1 min, then add chopped tomatoes, beans, and stock.
3. Cover with cling wrap and pierce 3 times, microwave for 2 minutes. Stir well and let stand for 1 min. If your chili starts to dry out, add some reserved tomato juice, but remember that it will not reduce as much in the microwave as it would on the stove top.
4. Cook and cover on medium for another 2 mins. Stir and allow to stand for 1 min before serving topped with sour cream, cheese, and coriander if you like.
