In Morocco you will find freshly squeezed juices sold everywhere! In markets, stalls, cafes, in mahlabas; which are the go-to places for a quick and cheap snack that you can eat on the spot, or take to go.
Lemon juice is especially popular during the summer because lemons are readily and cheaply available, and their juice is sure to quench your thirst on a hot summer’s day, or after a long day of fasting during Ramadan.
If you have lemons, fresh ginger and a sweetener, then you can have this juice done in the next 10 minutes. Just blend all the ingredients and you have a cooling drink to enjoy along with your meals.
Note: Moroccans love their sugary drinks, but feel free to adjust the sweetness to your liking.

Ingredients
6 large ripe lemons
60g (2 ounces) fresh ginger
3 tablespoons white granulated sugar (or to taste)
1L (4 cups) water
500ml (2 cups) ice cold water (or to taste)
Steps
Step 1: Preparing the Ingredients
1- Peel the lemons making sure to remove all the white pith.
2- Cut the lemons into round, then remove and discard the seeds.
3- Peel the ginger and cut it into medium pieces.
Step 2: preparing the juice
1- Place the lemon and ginger pieces in a blender.
2- Add the sugar and water, then blend until smooth.
3- Strain the juice into a large bowl or pitcher, then discard all the solids.
4- Add the cold water to the juice, and mix to combine.
5- Adjust the sugar to taste, then serve cold!
