Full written recipe - French Beans & Aloo ki Sabji
Prep time: 10-15 minutes
Cooking time: 15-20 minutes
Serves: 3-4 people
Ingredients:
FRENCH BEANS | फ्रेंच बीन्स 300 GRAMS
POTATO | आलू 3 MEDIUM SIZED
GREEN CHILLI | हरी मिर्च 2 NOS.
GARLIC | लहसुन 4 CLOVES
GINGER | अदरक 2 INCH (ROUGHLY CHOPPED)
MUSTARD OIL | सरसों का तेल 2 TBSP
MUSTARD SEEDS | राई ½ TSP
CUMIN SEEDS | जीरा ½ TSP
RED CHILLI | लाल मिर्च 1 NO.
ASAFOETIDA | हींग ¼ tsp
CURRY LEAVES | कड़ी पत्ता 8-10 LEAVES
GINGER GARLIC GREEN CHILLI PASTE
SALT | नमक TO TASTE
BLACK SALT | काला नमकA PINCH
BLACK PEPPER | काली मिर्च A PINCH (FRESHLY CRUSHED)
TURMERIC POWDER | हल्दी पाउडर ¼ TSP
GARAM MASALA | गरम मसाला A PINCH
LEMON JUICE | नींबू का रस 1 TSP
FRESH CORIANDER | हरा धनिया A HANDFUL (CHOPPED)
Method:
Wash the beans & pat them dry, then cut the tops and the bottom slightly & chop them into 1-2 cm thick dices.
Cut the peeled potatoes into dices & make a coarse past of ginger, garlic & green chilli using a mortar & pestle.
Set a kadhai over high flame, add the mustard oil & let it heat up until it reaches its smoking point, then lower the flame & let the oil cool down slightly.
Then add mustard & cumin seeds, red chilli, asafoetida, curry leaves & the ginger garlic paste, stir well & cook over high flame briefly.
Next, add the diced potatoes, stir well & cook over high flame for 1-2 minutes, then cover & cook over low flame until the potatoes get 90% cooked, take the lid off & stir the potatoes at intervals, this process will take 7-8 minutes.
Once the potatoes are 90% cooked, add the beans along with salt, black salt, black pepper & turmeric powder, stir well then cover & cook over low flame for 5-6 minutes or until the beans get cook, I prefer them to be a little crunchy but you can cook them further until soft.
Give it a stir 2-3 times while cooking just to ensure that the potatoes don’t stick to the bottom.
Once cooked, add garam masala, lemon juice & fresh coriander, stir well & your quick & easy Aloo Beans sabzi is ready.
