ETON MESS RECIPE!! Learn how to make a traditional english dessert that consists of strawberries, meringue, whipped cream and strawberry sauce. It’s similar to a trifle but since it’s a “mess” you don’t have to worry too much about putting the layers together 😌 Also learn how to make perfect meringue. We made a small variation to this dessert by adding some raspberries which is totally optional.

RECIPE | ETON MESS |
Step 1
MERINGUES
Meringues are crispy, delicate and fat-free cookies made with egg whites and sugar. No cream of tartar was used in this recipe.
Ingredients
2 large egg whites(70g). at room temperature
1/2 tsp lemon juice
1/2 cup+ 2 tbsp castor sugar(140g)
[Ratio Sugar to eggs 2 : 1 ]
a pinch of salt
Directions
•Preheat oven(fan) to 90*C/200*F.
•Wipe your bowl and whisk with lemon juice.
•Add in egg whites,a pinch of salt and lemon juice, whisk them on low speed until soft peak forms(about 1-2 minutes)
•Slowly add the sugar about 1 tsp at a time snd beat well after each addition(at least 30 seconds after each addition), until all the sugar is incorporated,,the sugar should be completely dissolved and the mixture should not be gritty if you rub it between your fingers,beat again if it is gritty at medium speed until the mixture is glossy very stiff(this process will take about 5-8 minutes).
•Add small dollops of meringue to the corners of your baking sheet and press the parchment paper down.
•Fill the piping bag. I used 4B open star nozzle,pipe on the baking sheets,squeeze the piping bag while it is about 1/2 an inch above the paper then lift as you stop squeezing to finish the meringue.
•Bake at 90*C /200F fan oven in the lower part of the oven for about 40-50 minutes or until they are dry and easily lifted from the baking paper with their bases intact and sound hollow when tapped on the bottom.Turn off the oven and allow the meringues to cool completely in the oven for at least one hour or overnight(don’t open the door).
•Transfer them to an airtight container to keep them crispy,they will last up to two weeks at room temperature.
*Notes
•Use fresh egg whites and need to be at room temperature for the best results,crack each egg in a separate bowl before adding to the mixer bowl as a tiny bit of yolk would ruin a whole batch of egg whites.
•Don’t reduce the amount of sugar.Ratio between sugar and egg whites should be 2:1.
•Don’t add sugar soon otherwise the mixture will not hold its shape.
•Start with low speed while whisking the egg whites,add sugar gradually ,increase the speed to medium and whisk until sugar is completely dissolved.
•Avoid over-whisking-only whisk until the sugar just dissolves and no longer.
•Bake the meringues as soon as possible.
•Every oven works differently,bake them accordingly,if your meringues have a slight tint after baking,decrease the oven temperature slightly and increase baking time.I usually bake them at 90*C and they turn out white.
•Leave them in the oven after baking for at least one hour(don’t open the door) to cool them completely as sudden change in temperatures will cause cracks in them.
•few meringues with little bit of cracks are completely normal. There shouldn’t be too many cracks or big cracks in your meringue.
•Store them in an airtight container to keep then fresh and crispy as moisture will make them soggy.
Step 2
Strawberry Sauce
Homemade strawberry sauce is the best and made with only 3 ingredients.It can make any dessert fancy.
Ingredients
200g strawberry (about 1 cup)
4 tbsp sugar(1/4 cup)
1 tsp lemon juice
Directions
•In a medium sauce pan combine sliced strawberries,sugar and lemon juice,place over medium heat and bring the mixture to boil,stir occasionally.
•Reduce heat and simmer for 8-10 minutes or until sauce is thickened,stir occasionally.
•Remove from heat and allow it to cool at room temperature,blend it,you can store in the fridge for up to 1 week in an airtight container.
STEP 3
Ingredients
For whipped cream
1 cup whipping cream
2 tbsp icing sugar
1/4 tsp vanilla extract
Directions
•Place cold whipping cream into a chilled mixing bowl and whip until soft peaks form.
Add in sugar and vanilla extract and beat until
Stiff peaks form, set aside.
Step 4
Assemble Eton mess
•Gently fold few crumbled meringues into half of the whipped cream.
•Layer in a serving bowl or glass, Ist strawberry sauce, then meringue whipped cream mixture, strawberry sauce, whipped cream plain then decorate with sliced strawberries ,whole raspberries and whole meringues.
•Serve immediately, assemble Eton mess right before serving otherwise the meringues melt in the cream and we need crispy crunchy meringues in every bite.
