Ingredients:
– 150 g glass noodles (mung bean noodles)
– 200 g chicken/pork
– 1 bell pepper
– 100 g cabbage
– 2 carrots
– 1 onion
– 2 spring onions
– 4 garlic cloves
– 1 chicken stock cube
– 1/2 tsp salt
– 1/2 tsp black pepper
– 1 tsp annatto (optional, omit or replace with saffron)
– 3 tbsp soy sauce
– Vegetable oil
Procedure:
1. Mince 4 garlic cloves, chop 1 onion and 2 spring onions; julienne 1 bell pepper, 100 g cabbage and 2 carrots; dice 200 g chicken
2. Soak 150 g mung bean noodles in water
3. Add vegetable oil to a saucepan or a wok, fry the minced garlic until brown, then remove it
4. Sauté the onion for about a minute, then add the diced chicken and let it brown
5. Add 1/2 L water, 1 chicken stock cube and 1 tsp annatto dissolved in a bit of water; bring to a boil, then add carrots, cabbage and bell pepper and simmer for 5 more minutes
6. Add the noodles, 3 tbsp soy sauce and 1/2 tsp black pepper; check for salt and cook for 5 more minutes (until the noodles are cooked), adding more water if necessary
7. Garnish with the spring onions and fried garlic; enjoy!
