Bourbon Chicken 💜💚💛
Bourbon Street Chicken🎺

3 boneless, skinless Chicken Breasts (you could also use chicken 6 to 8 chicken thighs)
Pinch of Salt and fresh ground Pepper
About 1/2 cup Cornstarch
Cut chicken into bite-size pieces (about 1 inch). Sprinkle with salt, pepper and cornstarch. Toss to coat.
In a large skillet for frying add a shallow amount of cooking oil about 3 to 4 tablespoonfuls (I used vegetable oil)
Heat the oil on medium heat and fry in batches 4 minutes on each side or until golden brown and cooked through. Place in a pan with a wire rack to drain any excess oil.
In a sauce pan add the following ingredients to make the
Bourbon Sauce Recipe:
1 to 2 teaspoons minced Garlic
1 Tablespoon minced Ginger
1/2 to 1 teaspoon Crushed Red Pepper Flakes
1/2 cup Apple Juice or Orange juice can be substituted
1/2 cup Chicken Broth
1/3 cup Brown Sugar
1 Tablespoon Apple Cider Vinegar
1/3 cup Soy Sauce
2 teaspoons Ketchup (optional)
2 tablespoons Bourbon
Let come to a boil and then turn down on low to reduce a few minutes. Once the chicken is cooked pour out the excess oil in the frying skillet and return the chicken to the skillet. Pour the reduced sauce over the chicken and let it heat thru tossing before serving over your favorite rice or try my recipe below.
Cilantro/Lime Minute Rice
2 cups Water
2 cups Instant Minute Rice
pinch of salt and pepper
Zest and juice of a Lime
2 tablespoons chopped fresh Cilantro or substitute with Parsley
pat of Butter (optional)
In a saucepan bring water to a boil. Add minute rice, salt and pepper. Return to a boil and cover with a lid. Turn off the heat and let the rice hydrate for 5 minutes until fluffy.
Add zest & juice of the lime, cilantro and butter. Stir with a fork to fluff. This rice is also good with so many other things like in this video link below:
