Hi Everyone,
Savor with me this delicious Filipino Pork Sinigang Stew but with Kimchi & Tomato Paste! This Filipino classic with a fun twist is so comforting and it is only one-pot, quick, and super easy to make :)
Ingredients:
• 1 lb pork belly, sliced
• 4-5 cups water
• few garlic cloves, diced
• 1 small onion, diced
• 2 medium tomatoes, diced
• 1 pack sinigang mix (tamarind soup base)
• 1 cup kimchi
• 2–3 tbsp tomato paste
• 1 cup daikon radish, sliced
• few okra
• green chile peppers
• 1 eggplant, sliced
• 1 cup long string beans, cut into 2-inch pieces
• 2 cups kangkong (water spinach leaves) or watercress leaves or plain spinach
• Fish sauce or salt to taste
• pepper to taste
• olive oil
Steps:
1. Sauté garlic and onions in hot oil until golden brown.
2. Add pork belly and fish sauce.
3. Add tomato paste and tomatoes.
4. Add water and let it boil.
5. Once pork is cooked, add tamarind soup base.
6. Add kimchi.
7. Add eggplant, long string beans, daikon radish, okra, and chile peppers.
8. Add pepper to taste and turn off heat.
9. Add water spinach leaves and mix.
10. Serve hot and savor!
