Eggplant Pizza Bites:
Ingredients:
Eggplant (sliced) ½ kg
Tomatoes (sliced) 3
Salt 1 tsp
Oil 2 tbsp
Dried Italian herbs 2 tsp
Marinara sauce 1 cup
Basil leaves 2 tbsp
Mozzarella cheese (grated) 1 cup
Method:
In a bowl toss eggplant with oil. Then add tomatoes, dried Italian herbs, marinara sauce, basil leaves, salt and cheese. Now bake it until the cheese melts. Serve hot.
Dhaga Chicken Pulao:
Ingredients For Stock:
Chicken ½ kg
Garlic 1 bunch
Salt to taste
Onions 2
Water as required
Remaining Ingredients:
Rice (soaked) ½ kg
All spice (whole) 2 tbsp
Fried onion ½ cup
Red chilies (whole) 10
Ginger (julianne) 1 tbsp
Tomatoes 2
Green chilies 4
Salt to taste
All spice powder 1 tsp
Oil ½ cup
Method:
For the stock in a pot add water, chicken, garlic, salt and onions. Cook until the chicken gets shredded and bone get separated. Then heat oil add whole all spice, sauté well. Now add tomatoes, green chilies, fried onions, salt, whole red chilies and ginger. Cook well. Then add chicken, cook well. Now add stock and give it a boil. Then add the rice, mix well. Now add salt, all spice powder and green chilies. Cover and cook well. Serve hot.
Masala Lacha Paratha:
Ingredients:
Wheat flour 1 cup
All-purpose flour 1 cup
Salt to taste
Ginger garlic paste 1 tsp
Green chili paste 1 tsp
All spice powder 1 tsp
Turmeric powder ¼ tsp
Oil 2 tsp
Red chili flakes 1 tsp
Onions (chopped) ¼ cup
Coriander powder 1 tbsp
Cumin powder 1 tsp
Fresh coriander ½ bunch
Clarified butter for frying
Method:
In a bowl add wheat flour, all-purpose flour, salt, ginger garlic paste and green chili paste. Mix and knead the dough well. In a bowl add all spice powder, turmeric powder, red chili flakes, chopped onions, coriander powder, cumin powder, fresh coriander. Mix well. Then spread the dough evenly, apply oil and sprinkle the spice mixture. Roll and cut it. Now spread each dough evenly and sprinkle the spice mixture. Then heat oil and fry the parathas well. Serve hot.
