Summer in the Philippines is hot but fun as fiestas are common. And one dish, Lechon is a very popular dish. It is cooked over charcoal pit in many former Spanish colonies, countries like The Philippines in Asia, Puerto Rico, Mexico, Colombia Latin America, Spain and Portugal in Europe, etc. Lechón is a Spanish word that refers to a roasted suckling pig. In The Philippines, lechon is the national dish and is a very popular delicacy especially during fiestas (there is even Lechon Festival being held annually in Balayan, Batangas,), birthdays, anniversaries, Christmas (Noche Buena), New Year's eve and more parties and family occasions. People prepare lechon in annual fiestas like the Sto. Nino festivals in Cebu and Kabankalan (Sinulog Festival), Iloilo (Dinagyang), Cadiz (Dinagsa), Kalibo (Ati-atihan) In Mexico, lechon is a crispy piglet dish that's a main course during the Day of the Dead (Día de los Muertos) celebration. It's often served with tamales. Suckling pig dishes in parts of Southeast Asia, like Singapore and Vietnam, are also influenced by ethnic Chinese cuisine. Aside from other variants like Cebu lechon, the classic/original Lechon de leche is still one of the best-selling roasted pig ever.
