Turning Weeds into Gold: Dandelion Jelly, Fried ‘Clams’ & Wild Rose Marshmallows | Off-Grid Alaska

Описание: Foraged feasts this week on the homestead!

We picked a basketful of beautiful yellow dandelion blooms and wild roses for jelly and sweets making. This jelly is an easy beginner canning recipe and quick to make!

We also made an infused massage oil for lymphatic massage from the dandelion petals, with some roses added in. We will be adding some wild violets and lavender to this!

A side of fried dandelions with dinner was on the menu as well.

In preparation of another fish camp trip, we whipped up some rose marshmallows to make s'mores. We scouted a new remote fishing spot last week, and have big building plans that we are excited to share with you all soon!

HOMESTEAD RECIPES

DANDELION JELLY
2 C packed petals
1 packet pectin
1/4C lemon
1 C honey

Infuse petals in a quart mason 1hr-24hrs. Strain, add water if needed to make 4 C liquid.

Combine liquid and lemon, bring to boil.

Whisk honey and pectin together in a separate bowl, add to liquid and bring back to a boil for 1-2 min.

Fill jars to 1/4'' headspace. Wipe rims, tighten lids, process for 10 min in water bath.

WILD ROSE MARSHMALLOWS
rose petals
1 C water
4 packs gelatin
1/2 C honey

Infused 1/2 C water with petals, strain. Take 1/2 C cold water in a separate bowl, sprinkle with gelatin. In a small saucepot heat rosewater and honey to 240. Slowly stream into gelatin mixture and whip 7 min or until fluffy. Put in greased baking tin and let set.
