Opened in 2014 on the Spanish island of Ibiza, Sublimotion is so much more than just the world’s most expensive restaurant. It’s dining at its most surreal, futuristic, and thought-provoking. Under the helm of double Michelin starred chef Paco Roncero, this one-of-a-kind establishment pushes the dining experience in bold new directions by combining food, art, and illusionism into a novel, revolutionary concept that ventures far beyond the palate.
With its own musical menu, choreographed service to match, and groundbreaking technology to awaken your senses one bite at a time, a meal here is anything but ordinary. During this theatrical gastronomic show, 12 lucky diners feast on avant-garde cuisine in a high-tech, interactive space called “capsule”, which serves as a blank canvas ready to be transformed into almost anything imaginable!
Architects and designers have joined forces with engineers, illusionists, and screenwriters to craft immersive audio/visual experiences to accompany Sublimotion’s Sci-Fi cuisine. The result is a spectacular 3-hour banquet that takes patrons on a journey through different times, places, and stages of emotion, from the bottom of the ocean to a sexy 20th-century cabaret to a futuristic dinner with friends in 2050.
And just when you thought things couldn’t get any more exciting, here comes the new season. Every year, chef Paco Roncero partners with some of the greatest names in the culinary world to offer guests at Sublimotion an unprecedented gastronomic experience, worthy of countless Michelin stars.
The show-stopping multisensory adventure is masterminded by famous film directors and its soundtrack put together by award-winning composers like Lucas Vidal (2 Goyas and 1 Emmy). Responsible for the sound is the famous DJ and music producer Wally López, who brings a taste of Ibiza nightlife to this theatrical dinner, while Spain’s brilliant illusionist Jorge Blass uses his talent to blur the boundaries of reality.
To complete the experience, diners are handed a Samsung Gear VR (virtual reality headset) that immerses them in a mind-blowing fantasy world during their meal. Sublimotion is located inside Hard Rock Hotel Ibiza on Playa d’en Bossa and serves up Spanish avant-garde cuisine at its molecular best. A staggering 20-course tasting menu accompanied by wine and champagne is 1,500€ per person, but some say it’s a small price to pay for such a dramatic gastronomy-meets-virtual-reality experience.

Sublimotion, has evolved as an expansion of Roncero's ever-evolving vision, focusing on how gastronomy connects all five senses.
Sublimotion's state-of-the-art systems, which include 360° screens of over 7,000,000 pixels and 50,000 lumens, create a vivid setting to evoke all the senses ensuring that the experience goes way beyond that of a normal restaurant, from controlling the temperature and scents, to arranging a musical ambiance fit for any occasion. Every surface, from the walls to the table, can be projected onto, and the staff do not only consist of an expert team of chefs, sommeliers and waiters, but also designers, technicians, musicians and illusionists.
Diners can expect the unexpected as they taste their way through the delectable menu created by Roncero exclusively for Sublimotion. Roncero's concept is about creating modern and experimental Spanish cuisine, using the best quality raw ingredients and then presenting them in unique and unexpected ways, never compromising on taste. Roncero's most cherished ingredient, olive oil, features widely across the menu, but always in a new and unrecognisable form; for example as a pillow of nitrogenised olive oil pegged to a washing line. The flavours are designed to cause a stir among the senses; from evoking memories and moments of humour, pleasure and fear. Diners will be taken on a gastronomic journey without needing to leave Ibiza, from the North Pole to the depths of the sea, stopping in Central Park, baroque Versailles or an oriental garden along the way.
The meal is also completely interactive, with diners encouraged to participate in the culinary show, so diners can "paint" their own desert, mix their own Bloody Mary cocktail in a test tube or eat from the projected mapping table, on which their plates may even appear to float in mid-air. In keeping with its Ibiza roots, the Sublimotion space is given a club ambience to accompany certain dishes through the use of special lighting and atmospheric music, with plates used to represent spinning DJ decks in mid-air.
