Sous Vide Butter Poached Shrimp Pasta

-INGREDIENTS-
15 shrimps deveined
4 tablespoon unsalted butter
Kosher salt and freshly ground pepper
1 pound dried spaghetti
2 tablespoons freshly squeezed lemon juice
1 tablespoon lemon zest
1/2 teaspoon red pepper flakes
1/2 cup reserved pasta water
1 shallot thinly sliced
2 garlic heads thinly sliced
2 tablespoons minced chives (optional)
2 tablespoons chopped parsley (optional)
-Sous Vide DIRECTIONS-
1. Pre-heat your Sous Vide to 135°F
2. Combine shrimp and butter vacuum seal or Ziploc bags
3. Place the bags into the Sous Vide for 30 minutes
4. In the meantime cook your pasta to al dente
-FINISHING STEPS-
1. Preheat a non-stick pan over medium heat
2. Combine contents of the bag, pasta water, lemon zest, lemon juice, shallots, garlic, and red pepper flakes.
3. Add pasta noodles
4. Continue to cook until liquids reduce into thick sauce
5. Transfer to plate and serve with minced chives and chopped parsley
Improvements:
1. Dicing the butter helps distribute the butter more evenly in the sous vide.
2. Next time, I'd consider reserving the shrimp on the side and adding it in with the pasta noodles.
