A turning chain is the stitch/stitches you make before or after you turn your work to start a new row or round.

What is the purpose of a turning chain? 0:17
The purpose of the turning chain is to bring your yarn up to the height necessary in order to work the first stitch of your next row or round.

How do you know how many turning chains you need to make? 0:27
The number of turning chains depends on what kind of stitch you are using. Because some stitches are taller than others. Underneath you can see the number of turning chains for each of the most basic stitches:

Single Crochet = chain 1
Half Double Crochet = chain 2
Double Crochet = chain 3
Half Treble Crochet = chain 4
Treble Crochet = chain 5

When does a turning chain count as the first stitch?
This is really a matter of preference, but the rule of thumbs is that the turning chain always counts as the first stitch of the next row, except for the single crochet. Why? Because the single crochet turning chain isn’t wide enough to substitute for the first single crochet of the row.
