This dessert is layered — in flavour and technique.
• White chocolate BBQ ganache made with charcoal-smoked oil
• Wagyu fat caramel for salinity and depth
• Garden passionfruit to cut through the richness
• Charcoal crisp made from burnt garden waste, blended into a powder and folded into an almond caramel
• Smoked malto using a separately smoked oil
Two smokes.
Crunch, cream, acidity, salt, sweetness.
You smell it first — then crack through the charcoal and work your way down.
This is the dessert I’m currently serving as part of my private chef experience.
