CHOLE PULAO - TASTY QUICK ONE-POT MEAL

Ingredients:
1 cup white chickpeas (safed Chole), soaked overnight & boiled
1 cup basmati rice, washed and soaked for 30 minutes
1 tbsp ghee
1 bay leaf
1 black cardamom
1 large onion, sliced
1 large tomato, finely chopped
1 large potato, peeled and chopped
1 tbsp channa masala
1 tsp red chilli powder
Salt to taste
Fresh coriander leaves, chopped, for garnishing
Chaat masala for sprinkling on top
Recipe:
Wash the soaked channa, pressure cook for 3-4 whistles or till done with salt and water and keep aside
Soak the rice for 30 minutes
In a cooker, heat oil, add bay leaf, black cardamom, onions, and saute. Then add the potatoes, sauté, then the channa masala
Mix and cook, then add chopped tomatoes, the spices - red chilli powder, salt, mix and cook well
Add the boiled channa and mix well
Then add the soaked rice, combine gently, add hot water and pressure cook for 2 whistles till done
Once the pulao is cooked, turn off the heat and let it rest for a few minutes. Then, gently fluff the pulao
Garnish with fresh dhania and a sprinkling of chaat masala and ENJOY HOT!!!
