Pumpkin Oatmeal Cookies are perfect for Fall or the Holidays! I added toasted pecans(optional)
and used a cookie scoop for consistent sized cookies! They were a big hit with my husbands
work buddies:)
Recipe: Pumpkin Oatmeal Cookies
Ingredients:
1 cup salted butter ( Room Temperature)
1 cup brown sugar
1 cup granulated sugar ( I used cane sugar)
2 teaspoons pumpkin pie spice
1 cup pumpkin puree
1 egg yolk
1 1/2 cups all purpose flour
1/2 teaspoon baking powder
2 1/2 cups Quick Oats
1 1/2 cups semi-sweet chocolate chips
1 cup toasted pecans ( Optional)
Combine soft butter and sugars,
Add pumpkin puree and egg yolk and beat till smooth
Mix flour, pumpkin pie spice and baking powder together and add to wet mixture
add chocolate chips and nuts and mix in.
Use a cookie scoop and drop onto parchment lined cookie sheets and bake in a 350 degree oven
for 16 - 22 minutes or until edges of cookies are golden brown! Enjoy
