Tandoori Feta (Baked & Smoked) Ingredients:
• D’lecta Feta – 150–200 g block (cut into thick slabs or large cubes)
• Ginger garlic paste – 1 tsp
• Tandoori masala – 1 tsp
• Red chili powder – ¼ tsp (optional)
• Lemon juice – 1 tbsp
• Honey – 1 tbsp
• Oil – 2 tbsp (neutral or olive oil)
• Salt – a pinch (optional – only if needed)
• 1 small piece of coal – for smoking
• A small bowl or foil cup – to hold the coal inside the marination bowl
• Ghee or oil – a few drops (for dhungar method)
Method:
1. Prepare the Marinade:
• In a bowl, mix together:
• Ginger garlic paste
• Tandoori masala
• Red chili powder
• Lemon juice
• Honey
• Oil
• Salt (only if needed)
2. Marinate the Feta:
• Gently coat the feta slices or cubes in the marinade, ensuring all sides are covered.
• Place in a shallow dish or bowl.
3. Add Smoky Flavor (Dhungar Method):
• Heat a small piece of coal on an open flame until red hot.
• Place a small foil cup or steel katori in the center of the marinated feta dish (not touching the feta).
• Drop a few drops of ghee or oil onto the hot coal — it will smoke instantly.
• Quickly cover the bowl tightly with a lid or foil to trap the smoke.
• Let the feta sit with the smoke for 5–10 minutes, then remove the coal.
• Cover again and refrigerate overnight to marinate fully.
4. Bake the Feta:
• Preheat the oven to 180°C.
• Line a baking tray with parchment paper.
• Gently place the marinated feta on the tray.
• Bake for 12–15 minutes, until slightly golden at the edges and soft
inside.
5. Serve:
• Carefully plate the warm feta. Drizzle with extra honey or lemon juice if desired. • Garnish with microgreens, coriander, or chili oil.
• Serve with toasted pita, crackers, or as part of a fusion mezze platter.
