Perfect 👍 Here’s the
🌿 Dough for Börek (for 1 large spiral or 2 medium ones)
Ingredients:
• 500 g flour (all-purpose, sifted)
• 250 ml warm water
• 2 tbsp vegetable oil (olive or sunflower)
• 1 tsp salt
• 1 tsp vinegar or lemon juice (for elasticity)

🔹 Preparing the dough:
1. In a large bowl, mix the flour and salt.
2. Make a well in the center, pour in the water, oil, and vinegar. Knead into a soft, elastic dough (it should not stick to your hands).
3. Divide into 4–5 balls. Brush them generously with oil, cover with plastic wrap or a towel, and let rest for 30 minutes. (Brushing with plenty of oil helps the dough stretch very thin later.)
4. After resting, roll out each ball very thin — almost transparent.

🌿 Filling (spinach + cheese):
• 300 g spinach (fresh or frozen, lightly sautéed to remove excess liquid)
• 200 g white cheese (feta, bryndza, or Turkish beyaz peynir)
• A pinch of black pepper and optionally fresh herbs (dill, parsley)
Mix spinach with crumbled cheese.

🌿 Shaping the spiral:
1. Brush the rolled-out sheet lightly with melted butter or oil.
2. Spread the filling along one long edge and roll into a log.
3. Coil the log into a spiral (“snail”) shape and place on a baking tray.
4. Brush the top with egg yolk mixed with 1 tbsp milk, and sprinkle with sesame or nigella seeds.

• Preheat the oven to 190–200 °C (375–390 °F).
• Bake for 30–40 minutes until golden and crisp.
