Italian Ricotta Cheesecake w/Homemade Graham Cracker Crust
Ingredients:
Cheesecake Filling:
2 cups Ricotta Cheese, drained
8 oz. Cream Cheese Softened
1 cup Sugar
3 large Eggs
2 teaspoons Vanilla Extract
1/4 teaspoon of Salt
Zest of one lemon
For the Crust: (Homemade Graham Cracker recipe video posted)
1 1/2 cups Graham Cracker crumbs
1/2 cup Unsalted Butter, melted
1/4 cup Sugar
Pinch of Salt
Preheat oven to 350 degrees F. With a food processer or in a bag with a heavy tool beat graham crackers to make crumbs. In a bowl add the crumbs, sugar, salt and melted butter until the crumbs resemble wet sand. In your baking dish or springform pan press mixture into a even layer and bake for 10 minutes until golden. Let cool and set aside to make filling. In mixing bowl combine the ricotta cheese and cream cheese and beat until smooth. Add sugar, vanilla and salt and mix again until just incorporated. Next add eggs one at a time until mixture is light and fluffy. Pour the filling into cooled graham cracker crust. Smooth top with a spatula and bake for 50-60 minutes. Make sure the center is set but still slightly jiggly. Turn off oven and leave cheesecake inside with the door slightly ajar for a minimum of one hour. Remove from oven and let cool to room temperature then refrigerate for at least 4 hours or overnight. Enjoy!
