Today Chef Michael is taking us on a masterclass of one of his favorites: smoked threadfin fried rice. Inspired by a fish fried rice he once had while traveling in Japan, for this eggless fried rice recipe Chef Michael has created a smoky, spicy fried rice packed with umami. His signature fried rice adds smoked threadfin and dashi-cooked rice for that deep umami, green shiso leaves for freshness and Chinese screw chili peppers for heat. And, as always, finished with some good ol’ wok hei.🔥🔥🔥

Ingredients:
Rice (cooked in dashi)
Smoked threadfin
Screw chili peppers (螺丝椒 ‘Luosi Jiao’)
Fermented black beans
Green shiso leaves
Spring onions
Yukari seasoning
