In today’s video, I’ll show you step-by-step how to cook cowpeas until soft and creamy, sautéed with aromatics and that iconic Benny spice for the perfect balance of savory and spice.
🫘 Ingredients:
2 cups dry cowpeas (nyemba)
1 large onion, chopped
2 tomatoes, chopped
2 garlic cloves, minced
1 tbsp oil
1 tsp Benny spice
Salt to taste
Water for boiling
🥄 Directions:
1. Wash the cowpeas and soak them for 4–6 hours or overnight (optional for faster cooking).
2. Boil the cowpeas in a pot of water until tender (about 45–60 minutes).
3. In a pan, heat oil. Add onions and sauté until soft.
4. Add garlic and stir until fragrant.
5. Add chopped tomatoes and cook until they soften into a sauce.
6. Stir in boiled cowpeas. Add salt and Benny spice.
7. Let simmer for 5–10 minutes to blend flavors.
8. Serve hot with pap, rice, or bread!
