Masala Veg Pulao is a flavorful Indian rice preparation, infused with spices and mixed vegetables. Cooked as a wholesome one-pot dish, it offers a perfect harmony of taste, texture, and nutrition.
Ingredients:
Rice - 250gm or one and half cup (soaked for 30 minutes and drained)
Beans - 100gm
Carrots - 100gm
Cauliflower - 100gm
Onion - 1 medium sized
Tomato - 1 big
Garlic - 15-20 cloves
Ginger - 1inch
Green chilli - 2
Salt
Oil - 3tbsp
Dry spices:
Turmeric powder - 1/2 tsp
Coriander powder - 1tsp
Jeera powder - 1/2 tsp
Red chilli powder - 1/4 tsp
Whole Spices:
Shah jeera (Caraway seeds) / Cumin seeds - 1/2 tsp
Cinnamon sticks - 2 inch
Bay leaf - 2
Dry fenugreek leaves - 1tbsp
Green Cardamom - 4
Black cardamom - 2
Black peppercorns - 10 -12
Cloves - 6
Recipe:
In a pressure cooker, take 3tbsp of oil and heat up. Add all the whole spices and sauté for a minute. Put in the slit green chilli and the chopped onions. Sauté onion for 5 minutes until it’s soft and slightly brown.
Grind tomatoes, ginger and garlic. Once onion is fried add the paste into it. Sauté it for 30 seconds and then add turmeric powder, coriander powder, jeera powder and chilli powder. Mix well and the add the chopped vegetables. Add in salt and cook for 2 minutes.
Lastly add rice , mix well and then add 3 cups of boiling water. Adjust the salt if required. Close the lid and cook until 1 whistle.
Serve it hot with some salad and curd!!
