Black pudding or Blood pudding pronounced Puddin' is one of Trinidad's most popular street foods. It is made primarily with fresh pigs blood but frozen can work also as seen in this video.
The blood is seasoned with green seasoning ( a combination of culantro/recao/bandania, hot peppers,pimento peppers,garlic,puddina/broad leaf thyme, fine thyme) salt and other secret seasonings that makes each vendors puddin unique.
I was thought this recipe Ben one of the grandchildren from pioneers in puddin making the Quan Kep's.
This recipe makes 3 lbs pudding.
This poaches on a Medium heat for 30 mins. DO NOT BOIL!
1/2 tsp Geera
1/4 cup Green seasoning [ culantro, garlic,pudina or broad leaf thyme, fine thyme, pimento pepper, hotpepper]
2 tsp Salt
1 tsp Chinese seasoning (jgm)
1/2 tsp Garlic powder
1/2 tsp Onion powder
2 CUPS - 1 day old bread

30 oz pork blood
