FRUIT AND NUT CRUMBLE
Ingredients
2-3 medium peaches
2-3 medium plums
4-5 cherries
Salt to taste
¼ teaspoon cinnamon powder
3 tablespoons honey
¾ cup rolled oats
3 tablespoons sorghum (jowar) flour
2 tablespoons muesli
1 tablespoon almond slivers
1 tablespoon pistachio slivers
Method
1. Halve, deseed and cut the peaches and plums into cubes. Halve and deseed cherries. Transfer the chopped fruits in a bowl.
2. Add salt, cinnamon powder and 2 tablespoons honey and mix. Set aside for 10-15 minutes.
3. Preheat oven to 180̊ C.
4. Dry roast rolled oats in a non-stick pan till light golden brown. Transfer in another bowl. Similarly, day-roast sorghum flour.
5. Add muesli, walnuts, almond slivers, pistachio slivers and roasted flour to roasted oats and mix.
6. Transfer the fruit mixture on a square glass baking dish and spread half of oats mixture on top.
7. Add remaining honey to remaining oats mixture, mix well and spread on top of prepared fruit mixture.
8. Put the tray into the preheated oven and bake for 15-18 minutes.
9. Serve warm.
