Описание: This video will present the story of the art of cooking and food science. Every year, my wife makes different types of pickles and I consume it over the years. Most commonly, I enjoy pickles with my fruit salad, especially in my office. I asked her to prepare nabak-tamarind (or boroi-tamarind) pickle, my favorite one. She prepared and I have documented the processing steps and ingredients. After preparation, I have asked my one of my students to measure the basic parameters of food stability. I have then analyzed the processing steps based on the hurdle technology of food preservation and explored why it had so long shelf life.
