El pie azul es una seta comestible, que la vemos todos los años y muy fácil de identificar.
En la cocina a mi me resulta un poco fuerte de sabor, pero en guisos está muy buena.
Aquí, en el video os comparto los detalles para poderla identificar. También os comparto unas bonitas imágenes de los paisajes que se pueden ver desde Garai, un pequeño pueblo en las faldas del monte Oiz en Bizkaia, donde por cierto hay dos restaurantes buenísimos.
Mi recomendación, no comer ninguna seta sin la identificación por un experto.
Lepista nuda (Bull.) Cooke 1871

Características:
-Sombrero: De tamaño mediano, entre 6 a 15 cm de diámetro, convexo de joven y aplanado convexo en la madurez, con un suave y amplio mamelón.
Cutícula lisa, de color variable con tonos azulados, lilas, marrones y ocres
-Láminas: finas, apretadas, adnatas de color lila azulado, que se separan fácilmente de la carne y que con la madurez se tornan ocráceas en la arista
Pie: Corto y grueso, la base es un poco bulbosa, donde se adhiere el sustrato, la superficie tiene el mismo color que el resto, pero está recubierta de una fina capa blanquecina.
Carne: Compacta, tierna, de color blanco -lilacino con un olor y sabor agradable
Esporada de color rosáceo
-Comestibilidad: Buen comestible, para mi gusto un poco fuerte, pero con estofados sabe bien. Hay que decir también, que en algunas personas ha presentado episodios de intolerancia.
-Hábitat: Se puede ver en muchos hábitats, como coníferas y caducifolios.
-Lugar: En toda la geografía.
-Epoca: Es una especie tardía que suele aparecer en nuestra zona a partir del mes de noviembre normalmente.
Confusiones: con la Lepista sordida, de menos tamaño sobre todo el pie que es más delgado. Y con varios cortinarius como el purpurescens que tienen las esporas ocráceas y dejan este color en las láminas, una base del pie bulbosa y restos de cortina ocrácea en el pie.

The wood blewit is an edible mushroom, which we see every year and very easy to identify.
In the kitchen I find it a bit strong in flavor, but in stews it is very good.

Lepista nuda (Bull.) Cooke 1871

Features:
-Cap: Medium in size, between 6 to 15 cm in diameter, convex when young and flattened convex at maturity, with a soft and broad mamelon.
Smooth cuticle, variable in color with bluish, lilac, brown and ocher tones
-Gills: thin, tight, bluish-lilac adnates that separate easily from the meat and that with maturity they become ochery on the edge
Stem: Short and thick, the base is a little bulbous, where the substrate adheres, the surface has the same color as the rest, but is covered with a thin whitish layer.
Flesh: Compact, tender, white -lilacine with a pleasant smell and taste
Pinkish spore
-Edibility: Good edible, for my taste a bit strong, but with stews it tastes good. It must also be said that in some people it has presented episodes of intolerance.
-Habitat: It can be seen in many habitats, such as conifers and deciduous trees.
-Place: All over the country.
-Season: It is a late species that usually appears in our area from the month of November normally.
Confusions: with the Lepista sordida, smaller especially the foot that is thinner. And with various cortinarius such as purpurescens that have the ocher spores and leave this color on the blades, a bulbous base of the foot and remains of ocher curtain on the foot.

Il piede blu è un fungo commestibile, che vediamo ogni anno e molto facile da identificare.
