Gushtaba is an authentic non-vegetarian Kashmiri delicacy. Tender meatballs cooked in flavorful yoghurt gravy. It’s a dish influenced by the culinary style of Afghanistan, Persia and Central Asia.
INGREDIENT:
Mutton- 400gms
Fats- ½ cup
Salt to taste
Cumin powder- 1tbsp
Black pepper- 3tsp
Black cardamom powder- 1tsp
Water- 1½cup
Yogurt- 1cup
Ginger powder- 1tbsp
Garlic paste- 1tbsp
Green cardamom- 5pieces
Cinnamon sticks- 3pieces
Fennel seed powder- 1tsp
Onion- 1cup
Oil
Making:
• Beat the mutton until its soft like a dough, then add fats, salt, cumin powder, black pepper and black cardamom powder in it and beat again.
• Make big meat balls and cook in warm water for 1hr on low heat.
• For Gravy preparation: In a pan, add yogurt & whisk it well, then add 1½ cup water, ginger powder, garlic paste, black pepper, green cardamom, cinnamon sticks & fennel seed powder. Stir until it starts boiling on high flame then, add boiled meat balls and salt.
• Take sliced onions and fry them until golden brown, then make onion paste and pour the oil into gravy along with the paste.
• Leave it for 15-20mins on low heat.
• Gushtaba is ready to serve with rice.
