Carrot Wine

Carrot - 500 gms
Sugar - 400 gms
Wheat - a handful
Yeast - 1/2 tsp
Lime - 1
Cardamom - 3
Cinnamon - 4 pieces
Cloves - 6
Water - 3/4 litre
Wash the carrots and wipe with a clean towel. Grate them. Extract juice if 1 lemon. Soak yeast in 1/4 cup of warm water. Crush the spices. Boil 3/4 litre of water and allow it to completely cool.
Take a 3 litre glass jar or chinese jar and a wooden laddle which should be clean and dry. I have taken two 2 litre glass jars and filled with equal proportion. First put a layer with grated carrot. Then a layer of sugar. Repeat it. Then the spices followed by lime juice, yeast and whole wheat. Pour the water equally into both jars. Mix with a dry, wooden laddle thoroughly for 2-3 minutes. Leave a gap between the ingredients and the mouth of the jar to avoid the pressure of gas which form when fermentation take place. Close with a lid not too tight. Tie a neat cloth around the lid to prevent insects or ants getting in. Stir the ingredients on alternate days. The wine will be ready by 7 days. On the eighth day filter the wine through a clean cloth and store the wine in glass bottles.
