Описание: Hey friends! I'm back for more healthy vegan recipes! :) I have a healthy and delicious vegan mac and cheese recipe for you! This vegan mac and cheese is so tasty and is loaded with vegetables so it's a great way to get more veggies into you and your kids diet. It's oil free and super healthy with lots of vitamins, minerals, fiber, and healthy fats. It also tastes so freaking good. I hope you love it!

Vegan Mac & Cheese Recipe - OIL FREE & HEALTHY
(makes about 4 servings)

1 cup yukon gold potatoes or russet, peeled and diced
1/2 cup chopped onion (I used a sweet onion)
1/4 cup peeled and diced carrot
1 cup water
1/2 cup raw cashews
1-2 tsp minced garlic
1 Tablespoon runny roasted Tahini
1/2 tsp dijon mustard
juice of 1/2 lemon
1/4 cup nutritional yeast
1/2 Tablespoon salt (taste, and add more if you want to!)
1/4 tsp garlic powder (forgot to add that in - i ran out)
1/2 lb. of macaroni pasta
