Authentic Fante Kenkey / Accra Kenkey Recipe
Ingredients:
•Cornmeal (fermented, or prepared from soaked and ground maize)
•Dried banana leaves (for wrapping)
•Water
•Salt
Serve hot with:
• Shito (black pepper sauce)
• Fried fish or sardines or any protein
• Fresh ground pepper and onions
• Tomato sauce or stew
Instructions:
1. Prepare the Corn Dough (if not using ready-made fermented corn dough):
• Soak whole maize in water for 2–3 days to ferment slightly.
• Drain and grind into a smooth dough.
• Gradually Mix the cornmeal with water to form a soft dough.
• Let it ferment for an additional 3-5 days until slightly sour.
(Skip this step if using already fermented corn dough.)
2. Mix the Dough:
• Place the fermented corn dough in a large bowl.
• Add a little water and knead until smooth and lump-free.
• Season with salt to taste.
3. Cook Part of the Dough:
• Divide the dough into two equal parts.
• Place one part in a saucepan with some water.
• Stir continuously over medium heat until it thickens into a smooth, cooked paste (like stiff porridge).
• This process can take 10–15 minutes.
4. Combine Doughs:
• Mix the cooked portion with the uncooked portion.
• Knead thoroughly until well combined. This forms the kenkey base.
5. Shape and Wrap:
• Divide the mixture into portions and shape into balls.
• Wrap each ball tightly using dried banana leaves.
6. Steam the Kenkey:
• Arrange the wrapped kenkey in a large pot with a bit of water at the base.
• Steam over medium-high heat for 1½ to 3 hours, depending on the size of the balls.
• Add water as needed to prevent burning.
Serving Suggestions:
Serve hot with:
• Shito (black pepper sauce)
• Fried fish or sardines
• Fresh ground pepper and onions
• Tomato sauce or stew (Shito)
