Ingredients:
Mutton leg 1 ( around 1.5 kg)
To roast:
1. Pepper Corns 1 tbsp
2. Coriander seeds 1 tbsp
3. Cumin 1 tbsp
4. Cardamom 8 -10
5. Cloves 10-12
6. Cinnamon 1 piece
7. Nutmeg 1/2
Dry roast all the above ingredients, cool and grind to fine powder.
This this powder add 10 -12 garlic cloves, 1 tbsp of salt, 2 tbsp vegetable oil, 2 tbsp vinegar and juice of 2 limes .Grind this to fine paste.
Add a tbsp of chilli flakes to this paste and mix well.
Now make slits to Mutton leg and apply the prepared marinade and wrap with banane leaves first and then with aluminium foil.
You can keep this for 4-5 hours in refrigerator.
Preheat the oven for 160°c and place the packed mutton leg , slow cook this for about 5 hours.
To make rice.:
Ingredients:
Rice 3 cups ( Around 500 g)
Water 5 and 1/2 cups
Ghee 2 tbsp
Cumin 1 tsp
pepper corns 1/2 tsp
whole garam masala cardamom, cloves, cinnamon and star anise.
Saffron a pinch.
Salt to taste
1. Wash and soak rice for 30 minutes .
2. Heat 2 tbsp of ghee in a vessel, add cumin, pepper corns, whole garam masala and fry for a minute.
3. Add soaked and drained rice along with pinch of saffron and fry for a minute.
4. Add water ( 1/2 cup less than the double the quantity of rice) and salt.
5. When it comes to boil, slow down the flame, cover and cook fir 30 minutes.
Serving:
Roasted Lamb leg is kept on the flavoured rice and served with Arabic tomato Chutney.
