EASY CHICKEN CHOW MEIN | DINNER FOR TWO

Chicken Chow Mein
1 chicken breast
2 small onions thinly sliced
3 ribs of celery thinly sliced
1/2 14oz can bean sprouts
2 Tbsp soy sauce
1 cup chicken broth
1 heaping Tbsp corn starch
1/8 cup water
Poach chicken breast in enough water to cover, simmer until 165 degrees internally. Combine vegetables, chicken broth, soy sauce and diced, cooked chicken in a large sauce pan. Simmer over medium low heat until vegetables are tender. Mix corn starch and water, add to vegetables and diced chicken and stir until sauce is thickened and glossy. Serve with white rice and chow mein noodles. Enjoy!
