(2) Ole Xtreme Wellness high fiber wraps
2 large eggs, scrambled
1 NeverAny country breakfast chicken sausage
1/8 cup Velveeta shreds (or other 1-point cheese)
veggies of choice
Scramble eggs, add salt and pepper and set aside. Fry up chicken sausage and set aside. In a skillet sprayed with cooking spray, lightly cook tortilla until starting to brown. Remove tortilla and top with eggs, chicken sausage, cheese, and veggies. Cook second tortilla until starting to brown. Place on top of the egg mixture. Cut into four. To reheat, cook in the microwave for approximately 40 seconds (time depends on your microwave). Top with hot sauce or salsa for extra flavor.

For this recipe, I used Kirkwood pre-cooked turkey breast portions from Aldi, which come out to 2 points for 4 ounces. However, you could use any turkey breast or turkey breast tenderloin. Just check the points. Also, this could be a 2-point meal, but I added a point for the olive oil that I drizzled over the vegetables.
INGREDIENTS:
1.5 pounds Kirkwood pre-cooked turkey breast portions, cut into bite-sized pieces
Vegetables of choice - I used: red onion, green bell pepper, red bell pepper, orange bell pepper, yellow bell pepper, zucchini, squash, baby carrots, Brussel sprouts.
INSTRUCTIONS:
Spray a foil-lined tray with cooking spray. Dice/chop all the vegetables and spread out on a tray. Drizzle with olive oil. Bake in a 450-degree oven for 20 to 30 minutes, (depending on how roasted you like them), flipping the vegetables halfway.
Divide turkey and vegetables evenly into meal prep containers.
