This kill was completed on the Give Me No Mercy difficulty but you can use the exact same tactics on Give Me God of War difficulty or lower.

The aim of the fight is to stay up close against Fiske. He will come in close with a slam attack or use his Scythe from range. Throughout the fight continue to use your abilities and block all of his attacks, try to get used to parrying his attacks as these give you the best window of damage. Use your abilities as you get them and use them for the extra damage and stun. I would suggest rotating around her in the arena as you see me do and take advantage stuns whenever you get those.
