Today’s Cooking Tuesday, a special Valentine’s Day episode ❤️
For breakfast, I made red velvet pancakes with cream cheese glaze and bacon on the side.
For dinner, I made fettuccine Alfredo with shrimp — but with a twist!
I turned it PINK using beets and beet juice.
I made a 4-cheese roasted garlic Alfredo sauce, added beet puree for color, and mixed beet juice with pasta water to coat the noodles.
It came out creamy, flavorful, and so beautiful.
For dessert, I made homemade truffle balls using baker's semi sweet chocolate, heavy cream, butter, cream cheese, powdered sugar, and vanilla extract.
Then I rolled them in cocoa powder and sprinkles.
Everything came out so good and everyone loved it ❤️

Red Velvet Pancakes -
• 1 cup Pancake mix or base
• 1/4 cup Cocoa powder
• 2 cups buttermilk
• Red food coloring
Cream cheese glaze (4 oz cream cheese + 1/2 cup powdered sugar + 1/4 cup milk + 1/2 tsp vanilla extract)
Pink Shrimp Alfredo -
Pasta:
• Fettuccine
• 1 cup pasta water
• 2–3 tbsp beet juice
Pink Alfredo Sauce:
• 4 cheese blend
• Heavy cream
• Roasted garlic
• Butter
• Parmesan
• Beet puree + small amount beet juice
(Cook shrimp separately with garlic, then combine with sauce and pasta.)
Truffle Balls -
• Heavy cream
• Butter
• Cream cheese
• Powdered sugar
• Vanilla extract
(Roll in cocoa powder or sprinkles) - Chill until firm
