Ingredients:
Tindora / Kovakka / Ivy Gourd) - 500g
Onion - 1 big
Ginger garlic paste - 1 1/2 tbsp
Red chilly powder - 1 3/4 tbsp
Turmeric powder - 1/2 tbsp
Garam masala - 1 tbsp
Pepper powder - 3/4 tbsp
Rice flour - 2 tbsp
Besan / Gram flour / Kadala podi- 4 tbsp
Curry leaves
Salt
Oil
Steps:
Cut tindora into thin slices lengthwise. Add thinly sliced onion.
Add salt and mix well with hands applying little pressure.
Let it rest for 5 minutes.
Mix again.
By now, tindora will release its moisture.
Add ginger garlic paste, red chilly powder, turmeric powder, garam masala, pepper powder, rice flour, besan, curry leaves and mix well.
Do not add water. The moisture released from tindora and onion is enough.
Heat oil in a pan and deep fry on medium flame in batches.
Fry on high flame for the last one minute before removing from oil.
Enjoy hot.
