Layer 2 (The Filling): 400g Cream Cheese, 1/2 cup Powdered Sugar, 3/4 cup Fresh Cream, 180ml Condensed Milk, 1 tsp Vanilla Extract, Zest of 1 Lemon, Juice of 1/2 Lemon, 1 tbsp Corn Starch.

Layer 3 (The Glaze): Fresh Strawberries (sliced), 1/2 cup Powdered Sugar, Slurry (1/2 Lemon juice, 1 tbsp Corn starch, pinch of Salt, Vanilla extract).

The Method:
*Grind biscuits and mix with butter. Press firmly into a mold.
*Whisk filling ingredients until smooth and pour over the base.
*Bake at 165°C for 40-50 minutes.
*Simmer strawberries with sugar and slurry for 2 mins. Smash & spread!
*Refrigerate 3-4 hours (or overnight) before serving.
