This is a very easy and chill meal prep, perfect for those days when you have to cook, but are running low on energy. The ingredients and techniques used do most of the work, so enjoy your lazy day!
I’m making harissa grilled chicken, fluffy rice and blanched garlicky (and tangy) green beans — a balanced, high-protein meal that actually tastes good after a few days in the fridge.
These recipes are simple, beginner-friendly, and great for lunch or dinner meal prep.
Meal prep for 4–5 days • Simple ingredients • Big flavour

Ingredients
1. Microwave aromatic fluffy rice
2 cups long-grain rice
2½ cups water or broth
1 tsp salt
Aromatics (optional - over here I’m using 1 bay leaf and 1 star anise)
1 tbsp oil or butter (optional)
2. Harissa Chicken
800 g chicken thighs (or breasts=
3 tbsp harissa paste
1 tbsp olive oil
3 cloves garlic, grated
Juice of 1 lemon
1 tsp salt
½ tsp black pepper
3. Garlic Lemon Green Beans
200 g green beans, trimmed
1 teaspoon olive oil or butter
1 cloves garlic, minced
Salt & black pepper, to taste
Optional: squeeze of lemon

00:26 Aromatic Microwive Rice
For the microwave rice, wash the rice (until the water runs clean), add it to a microwave safe container that has a lid (preferably a glass one). To each measure of rice add 1+1/4 measures of water. Season with salt and, as an option, you can add aromatics (like a bay leaf and a star anise)

Mix all the ingredients in a bowl and then pour it over the chicken. Massage it and let it sit for at least 30 minutes. Then grill, stir fry or roast. Over here I pan fried it over medium him-heat and 5-7 minutes per side were enough for it to cook.
02:49 Blanched Green beans
Cook the green beans on salted boiling water for 2-3 minutes. Prepare a cold bath to stop the cooking process and submerge the beans in the water until it cools completely cools. Heat up a little bit of olive oil, sauté the chopped garlic, add the green beans and sauté for an extra 1 munute. Add a few lemon drops if you like tangy food as much as I do 😁
