🍣 One Pot Sushi Cake
INGREDIENTS:
• 1 cup sushi rice
• 1¼ cups water
• 4 tbsp rice vinegar
• 2 tbsp sugar
• 1 tsp salt
• 7–9 oz (200–250 g) salmon or tuna (sashimi-grade)
• 3–4 sheets nori
• 5–7 oz (150–200 g) cream cheese
• 1 big cucumber (I used 6 small crispy)
• 2 avocados
• soy sauce, wasabi, pickled ginger - to serve
HOW TO COOK:
1. Rinse the rice well until the water runs clear. Add water, bring to a boil, then simmer 12 min. Rest 10 min covered. Mix vinegar, sugar, and salt until dissolved (warm it slightly to help it dissolve), then fold into warm rice (gently stir the rice with a spatula to keep it from becoming mushy). Cool.
2. Line the bowl with plastic wrap or brush lightly with neutral oil (this helps prevent the ingredients from sticking to the bowl).
3. Layer (bottom to top):
Fish slices - Half the rice (press gently) - Nori sheet - Cream cheese - Cucumber + avocado slices (sprinkle avocado with lemon juice) - Nori sheet - Remaining rice (press firmly) - Final nori layer on top
4. Chill 1–2 hours in the fridge to set.
5. Turn onto a plate, remove plastic, slice with a wet knife. Garnish with sesame, avocado, sauces or roe. Serve with soy sauce, wasabi, and ginger.
Serve immediately and enjoy a perfectly layered, no-roll sushi experience!
