In this last addition to my healthy animal fats to cook with miniseries, I talk about the fat the comes from chickens: Schmaltz!
The word schmaltz comes from the Yiddish שװאַלץ (shmalts), which itself derives from the German Schmalz, meaning "rendered animal fat" or simply "grease." In culinary terms, schmaltz typically refers to rendered chicken or goose fat, which has been a staple in Ashkenazi Jewish cooking for centuries. It was traditionally used as a cooking fat in place of butter or lard, especially in kosher kitchens where dairy and meat cannot be mixed.
Chicken schmaltz is primarily made up of animal fats, specifically a mix of saturated, monounsaturated, and polyunsaturated fats. Here’s a breakdown of its typical fat composition:
1. Monounsaturated Fat (MUFA) – ~47%
• The dominant fat in chicken schmaltz.
• Known for being heart-healthy and similar to olive oil.
• Helps improve cholesterol levels and reduce inflammation.
2. Saturated Fat (SFA) – ~32%
• Provides stability at high cooking temperatures.

Over time, the term schmaltz has also taken on a figurative meaning in English, referring to something overly sentimental or excessively emotional, much like the richness of the fat itself.
