Catching crawfish in the South is as much a tradition as it is a hunt, and it happens everywhere the water settles—deep in the swamps, tucked into quiet ponds, and even in roadside ditches most folks drive past without a second look. When the water warms, crawfish start moving, crawling out of burrows and stacking up in shallow, muddy pockets where traps, nets, or lines baited with fish scraps do the work. It’s slow, hands-on harvesting, often done knee-deep in dark water with cypress knees, snakes, and whatever else the swamp decides to show you that day. But that’s part of the draw—turning overlooked water into a pile of live crawfish, straight from the mud to the table, the way it’s been done in Louisiana for generations.
